Stoller Dundee Hills Pinot Noir and Roasted San Marzano Soup

This soup was created by our Culinary Director, Becca Richards for the 2017 Pre-Thanksgiving and Thanksgiving Weekend Celebrations.

Prep Time: 20 minutes
Cook Time: 1 hour, 15 minutes
Serves 8

3 28 oz cans of San Marzano tomatoes
1 medium-large Spanish onion
1 medium red onion
3 shallots
1 carrot
1 fennel bulb
3 celery ribs
5 peeled cloves of raw garlic 
5 cloves of roasted garlic
2 cups vegetable stock
1 cup Stoller Family Estate Dundee Hills Pinot Noir
1 cup extra virgin olive oil
1 bunch parsley 
2 oz thyme 
3 fresh bay leaves - not dried, this is the secret to this soup
8 leaves of fresh basil
1 teaspoon crushed red pepper
Salt - any salt that is not iodized table salt
Black pepper

The roasted flavors in the soup come from one place, a hot oven. Set the oven to 375 degrees and let it reach full temperature before you begin to cook. 

Line a baking sheet with parchment paper lined – you’ll want to give the tomatoes a little bit of space, so choose a slightly larger one – and lay down separated sprigs of thyme in diagonals, so that fewer sprigs cover the most ground.

With the side of your knife, smash the 5 raw garlic cloves open and scatter them onto your parchment. This is where your canned tomatoes are going to become something delicious, and not just taste like canned tomatoes. 

Strain and reserve the juice from the canned tomatoes.  Cut the tomatoes in half laying them out onto the herbs and garlic, seasoning each tomato with salt and pepper. Drizzle the tomatoes with extra virgin olive oil. Once they are seasoned and shiny, put them into the oven for about 45 minutes. They will start to look caramelized, and in parts on the verge of burning, but fear not! They are tasty. 

While tomatoes are roasting, roughly chop the Spanish onion, shallot, carrot, fennel and celery. Toss them with olive oil and salt, and put them on a second parchment lined baking sheet. This tray can go onto the second oven rack to roast for about 20 minutes. 

While the oven roasting, take the parsley, bay leaves and thyme and tie them up in a little bundle. Herb love bundle. Dice your red onion into small bits and smash your roasted garlic cloves. Over medium heat, sweat your onions with a couple pinches of salt, until translucent. Once they are cooked with minimal to no color, toss in the roasted garlic and your herb bundle. Sauté for about a minute before adding the Pinot Noir. 

Once the wine has reduced by half, add your reserved tomato juice, veggie stock, another smattering of salt, and crushed red pepper. Set this to low and let it barely simmer, stirring every 8 minutes or so until the oven veggies are ready. 

Once the veggies are done, put everything into a food processor and blend until smooth. Then transfer the mixture to the liquid on the stove. Next, once cool enough to touch, smash up the tomato halves with your hands and add them to the pot. Discard the herbs and add all the remaining juices and garlic pieces to the pot along with whatever remains of your olive oil cup after all that roasting up!

Stir often and with some force, making sure everything is coming together, so it doesn’t look greasy or broken. If for some reason it looks too thick, you can splash some more stock or water in, and loosen it to your preferred consistency. Let the soup cook for 15 more minutes, which will allow all those flavors meet and combine. 

Lastly, chop your fresh basil, stir it in, and kill the heat. Your soup is ready to eat!

Bill Stoller

Bill was born here on the property and raised on the family farm outside of Dayton, Oregon. He received a degree in business and economics from Pacific University, as well as an MBA from Portland State University. In 1983, Bill co-founded Express Employment Professionals, currently the largest privately-held staffing company in the world, with over 600 offices in four countries. Additionally, in 2001, he founded Xenium, a human resources outsource company. This business success has enabled Bill to pursue his passion of wine and to contribute to his community. True to his Oregon upbringing, Bill sees himself as a custodian of the land he loves, and cares deeply about sustainability and environmental protection.

Gary Mortensen


As president, Gary brings to Stoller Family Estate thirteen years of senior leadership in the Oregon wine industry. As a start-up veteran he brings a passion for bleeding-edge technology and pushing boundaries. As a devoted historian, he is committed to preserving and sharing our nation’s diversity and heritage. He is also an active foundation board member of the Technology Association of Oregon, and is helping to found “Innovation Academies” for kids. Gary is an award winning director of two documentary films telling the stories of Oregonians who served in combat in Afghanistan and Iraq.

Melissa Burr

Director of Winemaking

Melissa was raised in the Willamette Valley. After completing her Bachelor of Science degree, Melissa studied winemaking and fermentation science at OSU. She joined Stoller in 2003 after working as a harvest hand at several local wineries, as well as a production winemaker at Cooper Mountain for three harvests. Melissa enjoys the creative and natural process of winemaking and appreciates that Oregon's wine industry is constantly evolving, pushing her to learn more about her craft.

Jason Tosch

Vineyard Manager

A native of Oregon’s Tualatin Valley, Jason Tosch has made his career farming premium quality wine grapes in the Willamette Valley, most recently at Anne Amie Vineyards.  He has served in leadership roles for the Oregon wine industry’s wine research and sustainability focused communities. Jason earned his degree in horticulture from Oregon State University, focusing on small fruits and berries. His high level of industry involvement led his alma mater to honor Jason with the College of Agricultural Sciences Luminary Award for early professional accomplishment in 2010. And, in 2016 the Oregon Wine Board presented him with the Outstanding Industry Service Award.

Emily Bachand

Direct Sales Manager

Emily joined Stoller Family Estate in early spring 2009, driven by a sincere enthusiasm to advance her career in the local wine industry. She brings with her knowledge of wine and food through extensive travels and personal research in the finest viticulture regions.

Shani Hodge

Wine Club Manager

A native of Montana, Shani followed her heart to Oregon in 2002. Formerly in the restaurant wine business, Shani sought a wine industry position closer to the “source,” and chose Oregon for its beauty, culture, and fine Pinot Noir. Shani brings us over a decade of hospitality experience in the Oregon wine industry managing tasting rooms, wine clubs, and winery events.

Victor Panichkul

Tasting Room Manager

Victor was born in Bangkok, Thailand and grew up in Thailand, Singapore and the United States. He studied international politics and journalism at Baylor University and spent 30 years working as a journalist for major newspapers in Texas, Baltimore and Washington D.C. He moved to Oregon in 2002 with his partner of 25 years and fell in love with Oregon wines. After covering the industry for 14 years as wine, food and beer columnist, he left journalism and joined the wine industry that he has come to love.

Elaine Shevlin

Hospitality and Promotions Manager

Elaine is a Sacramento native who graduated from California State University Chico. Elaine loves wine because she feels it’s a luxury that unites people, evokes thought, and heightens senses. She loves to travel and has lived in Costa Rica and New York City. Elaine believes there’s nothing better than enjoying company worthy to share your favorite wine with.

Cory Davis

National Sales Director

Cory joined Stoller as our national sales manager in the fall of 2005. He fell in love with Pinot Noir during his three-year stay in France, and moved to Oregon in the mid-90s, drawn by the natural beauty and burgeoning potential of the Pacific Northwest wine scene. Prior to joining Stoller, Cory worked as a distributor of some of the world’s finest wines.

Bill Hanson

National Sales Manager

Bill brings to Stoller over twenty-five years of wine industry experience. He serves as the Chair of the Board of Directors and Chair of the Marketing Committee for Low Input VIticulture and Enology (LIVE), and is the leading certifier of Sustainable Vineyards and Wineries in the Northwest. Bill supports the Society of Wine Educators as a Certified Wine Educator since 2007. In addition to his extensive wine management experience, Bill also brings the skills of a winegrower, as Bill and his wife Linda are owners of Libra Vineyard.

James Falvey

Business Development Manager

Born and raised in southeast Portland, James holds a Bachelor of Science in business administration with a focus in sports marketing from the University of Oregon. James worked with the Portland Trail Blazers before joining us at Stoller Family Estate. He fell in love with the winery the first time he drove up to the estate and saw the breathtaking approach.

Steve Caldwell


Steve has been our accounting and administration manager since January 2013. A native Oregonian, he graduated from OSU with a Bachelor’s Degree in business administration with a concentration in accounting. Prior to joining Stoller, Steve was the CFO of Willamette Valley Vineyards.

Ben Howe


Born and raised in the Midwest, Ben moved to Oregon in 2001. He attended Oregon State University, where he received his Bachelor’s degree in Fermentation Science. After graduation, Ben worked harvests in New Zealand, India, Oregon and California. Following his travels, he returned to Oregon to work for King Estate Winery, where he worked his way up the ranks as Enologist, Winemaker, Director of Winemaking, and finally, Vice President of Operations. He appreciates Oregon’s requirement of being nimble and flexible with each vintage’s offerings year to year and is excited to join the Stoller team.

Kate Payne Brown

Associate Winemaker

Raised in Salt Lake City, Utah, Kate came to Oregon for her undergraduate degree at the University of Oregon. She studied science and was intending to work in the Optometry field. However, shortly after graduation the allure of the wine industry changed the course of her career, and she moved to Australia to study at the University of Adelaide, where she completed her Master’s degree in Oenology. After a couple of years making Shiraz and Cabernet, she moved back to Oregon to work for Archery Summit, where she remained for over six years as the Assistant Winemaker. In 2014, she left to work for a French winemaking consultancy and is now thrilled to be a part of the wonderful team at Stoller Family Estate.

Marcus Mejia

Cellar Master

Originally from Eastern Oregon, Marcus moved to the western side of the state to study at Oregon State University. Studying graphic design took him to Florence, Italy where he was introduced to world of wines through Tuscany. After finishing his degree at Oregon State, Marcus moved to Walla Walla, Washington to study at the Center for Enology and Viticulture. While there, he spent four years working in the industry for one of the most prominent producers in the Pacific Northwest. Following graduation, his travels later took him to the Yarra Valley of Australia to make Pinot Noir. His ever growing desire to make great Pinot brought him back to the Willamette Valley, where he joined Stoller in 2015.

Mayme Berman

Trade Manager

Originally from Los Angeles, Mayme moved to Oregon to attend Lewis & Clark College. Following graduation, Mayme worked for two local craft breweries, and was a part of the sales team at a beer distributor. Thrilled to be on the wine side of things, Mayme loves working at Stoller because of the fun and passionate group of people. She says, “my inner wine geek really likes being connected to the whole process of making wine- from the vineyard to the cellar, and the view ain’t bad either.”

Michelle Kaufmann

Communications Director

Michelle Kaufmann, a Portland, Oregon native, earned her degree in journalism from the University of Oregon, focusing on public relations and communications. She most recently served as communications manager for the Oregon Wine Board, a semi-independent state agency dedicated to marketing, research and education initiatives that help Oregon wineries and vineyards throughout the state. Michelle has been involved with key media related initiatives in the Oregon wine community including the International Pinot Noir Celebration. In her new role, Michelle oversees all media relations and communications efforts. 

Austin Raz

Digital Brand Manager

As a native Oregonian with family roots in Newberg, Austin has had his eye on the wine industry for quite some time. Austin has worked for two of the world’s most influential brands at Nike and MTV, and studied New Media Communications at Oregon State University. What drew Austin to Stoller was the team’s vision of innovation and sustainability towards the environment, community, and economy. He is excited to bring his unique perspective into a creative role.

Chelsea Kraus

Wine Club Ambassador

Chelsea is a fifth generation Oregonian and Portland native who loves nothing more than spending time in wine country. When she learned that she could make a career out of it, it didn’t take long for her to come knocking on our door. Bringing with her more than ten years of customer service and a great love for people, you can find her mingling with our wine club members or playing with her Australian Shepherd, Cooper, out on the front lawn.

Adel Nemes

Sales Associate

Adel grew up in Hungary and moved to the United States after college. She lived in New York City for twenty years, where she attended culinary school and worked in the travel and hospitality industry, as well as in holistic health. She moved to Oregon two years ago and enjoys the peace and the slower pace of the wine country.

Megan Ranger

Sales Associate

Megan grew up in Dayton, Oregon, watching the wine country develop while she played on the family farm. Megan worked for us after high school during the first harvest of 2005, and has been a part of the tasting room ever since. She currently studies wine marketing.

Erica Miller

Assistant Vineyard Manager

Erica has lived in Oregon her whole life — growing up in Dufur, Oregon. She went to Linn Benton, and graduated from Oregon State University with a Horticulture Degree emphasizing in Viticulture and Enology.  While at Oregon State, Erica also played college volleyball and worked at OSU for a year in the Viticulture Research Lab under Patty Skinkis.

Nate Brown

Facilities Manager

Nate was born in Yamhill County, raised on his family farm outside of Carlton, and has witnessed Yamhill County grow into a world class wine destination. Previously a municipal utility worker specializing in sign, building, street, and landscape maintenance, Nate joined Stoller Family Estate in 2015. He’s been an artist for 20 years and specializes in local landscape painting. Nate is honored to have the opportunity to be able to work in world class facilities, and enjoy the beautiful natural landscapes at the Stoller property.

Kyle Stoller

Sales Associate & Cellar Hand
