PINOT-BALSAMIC REDUCTION

Both have complex, layered flavor profiles: Pinot gives earth tones of mushrooms and herbs, while balsamic brings an intense sweetness with notes of fig and plum. Ingredients

  • 1 c balsamic vinegar
  • 1 c Pinot Noir
  • 1/2 c brown sugar
  • 1 1/2 tsp salt
  • 1/2 tsp whole pink peppercorns
  • 1 fresh bay leaf
  • 2 sprigs fresh thyme

Directions

Place all ingredients in a small saucepan. Bring to a boil, and reduce heat to a low simmer.

Stir frequently and reduce volume by 2/3.

Strain liquid through a fine mesh chinois strainer.

Drizzle over meats or roasted vegetables.
