“Pinot Noir and balsamic vinegar are a beautiful example of a contrasting pairing. Both have complex, layered flavor profiles: Pinot gives earth tones of mushrooms and herbs, while balsamic brings an intense sweetness with notes of fig and plum. - 1 c balsamic vinegar
- 1 c Pinot Noir
- 1/2 c brown sugar
- 1 1/2 tsp salt
- 1/2 tsp whole pink peppercorns
- 1 fresh bay leaf
- 2 sprigs fresh thyme
Place all ingredients in a small saucepan. Bring to a boil, and reduce heat to a low simmer.
Stir frequently and reduce volume by 2/3.
Strain liquid through a fine mesh chinois strainer.
Drizzle over meats or roasted vegetables.
